Super Bowl recipes: Guy Fieri's Dragon's Breath Chili and beer bread
For Fieri's fiery chili, you will need:
3 tablespoons bacon grease or canola oil
2 tablespoons unsalted butter
3 Anaheim chiles, roasted, peeled, chopped
3 poblano chiles, roasted, peeled, chopped
2 red bell peppers, diced
2 jalapenos chiles, minced
2 yellow onions, diced
1 head garlic, minced
1 pound boneless chuck, trimmed and cut into 1/4-inch cubes
2 pounds ground beef, coarse grind
1 pound bulk Italian sausage
3 tablespoons chili powder
2 teaspoons each of cayenne pepper, ground coriander, ground cumin, granulated garlic, granulated onion, hot paprika, kosher salt and ground black pepper
2 cups tomato sauce
1 cup tomato paste
12 ounces lager beer
1 cup chicken stock
Two 15.5-ounce cans kidney beans, with juice
Two 15.5-ounce cans pinto beans, with juice
1 bunch green onions, thinly sliced
1 cup shredded Cheddar
To make, melt the bacon grease and butter in a large stockpot and then sautee all three kinds of chiles, bell peppers and onions until carmelized, about five minutes. Add the minced garlic and cook for one minute more. Add the boneless chuck and brown for four minutes, then add the ground beef and sausage, taking care not to break up either of those too much. Brown all the meat for seven to 10 minutes.
Add all of the spices (it's easiest if you've measured them out and combined them in a dish beforehand) and stir for one minute, then add the tomato sauce and paste and cook for two minutes. Stir in the beer, stock and beans, lower the heat and simmer for two hours. Garnish with onions and cheese.
For mom's beer bread -- which is so simple and yet so tasty that you can make it and then act like the mom in the old Rice Krispie Treats commercial -- you will need:
3 cups self-rising flour
3 tablespoons sugar
1 beer, room temperature (any kind, though the darker the beer, the more intense the flavor of the bread)
Pre-heat the oven to 350 degrees. In a large bowl, combine the flour and sugar, then slowly pour in the beer so as to minimize foam. It is important to get self-rising flour or you will have a mess on your hands. Combine the ingredients until there is no loose, dry flour left in the bowl and then transfer to a greased bread pan. Bake for 50-60 minutes, checking at the 50-minute mark because ovens vary. The top should be a hard, golden-brown crust.
When it's out of the oven, leave it to rest in the pan for a few minutes while you rub a stick of butter over the crust on top and let it melt. Then remove from pan and allow to cool before you slice, taking care to use a serrated bread knife because it can get crumbly.
